Sylvain Cathiard, Hautes Cotes du Nuits Rouge 'Aux Chaumes' 2022

"High limestone content, with clay and stones. Farming is practicing organic (not certified).
100% de-stemmed, 10-day cold maceration, 10-20-day ambient yeast fermentation in tank with no added SO2. Aged 15-18 months in barrels (20% new). No fining, no filtration, SO2 added after malolactic fermentation (20-25 ppm free, 40-50 ppm total)."
The Hautes Côtes de Nuits Aux Chaumes comes from a 1.35-hectare vineyard, another serious expansion of the estate. The parcel has a high limestone content, with clay and stones. Not as mineral-driven as the Dames Huguettes, this still has fine structure and vivid acidity. There is something very appealing about this 2022, and Cathiard certainly has the touch.
